Perfect Stovetop Jasmine Rice Every Time

- 1 cup Jasmine Rice
- 1 tsp olive oil
- 1.5 cup hot water
- .5 large onion sliced thin
- 4 tbsp olive oil for frying onions
- 2 tbsp fresh cilantro minced
Heat rice on medium heat with olive oil until fragrant about 5 min
Add Hot Water and bring to a boil.
Give rice a quick stir
Cover with a tight lid and set a timer for 20 minutes
Remove from heat and rest for 10 min without removing the lid
Remove lid and fluff rice
In a shallow pan add 4 tbsp olive oil and heat on med-high. Add onions.
Saute until golden brown and then remove from oil and drain on a paper towel.
Top cooked rice with fried onions and fresh cilantro.
